Salted Egg Prawns (Chinese Golden Prawns 黃金蝦球)

- 200 g Prawn
- 2 pieces Salted egg yolks
- 1 piece Egg white
- ½ cup Corn starch
- 3 tbsp Oil
- 2 gloves Garlic
- 2 tbsp Butter
- ¼ tsp Sugar
- ¼ tsp Soy sauce
Marinades
- ½ tsp Salt
- ½ tsp Chinese rice wine
- Little White pepper (Optional)
Wash and dry the prawns. Marinate the prawns with the marinades for 20 mins. Mince the garlic.
Steam the salted egg yolks for 15 mins. After that, mash the salted egg with fork.
Dry the prawns after marination. Coat the prawns with egg white and then corn starch.
Heat the pan with oil. Add prawns and fry until coating turn golden and crispy. Get the prawns out from the pan.
Reheat the pan with butter. Add garlic, salted egg yolks, soy sauce and sugar to stir fry it.
