Taste the Flavors of Prawn Fry Egg

Prawn fried egg is one of the most traditional Hong Kong home cooking dish.  With only 3 main ingredients in this dish, the umami of prawns, smoothness of eggs and freshness of yellow chives is perfectly combined to give delectable flavors.

How to make perfect Prawn Fried Egg?

When preparing this dish, timing is an important factor to consider.  First, given that prawns need at least 5-8 minutes to be completely cooked while eggs need only 1-2 minutes, therefore, prawns should be cooked completely beforehand.

Secondly, in order to get the “lava-like” half-cooked scramble egg texture, the cooking process of egg have to be quick (Within a minute).  We can use high heat to heat up the oil then turn to low heat immediately after pouring the egg into pan.

Notes

There is a chance that some eggs carry the bacteria salmonella.  If you have any concerns about serving half-cooked eggs, cook the eggs until the eggs are firmed in this case.  Or using Japanese eggs (Pasteurized eggs) as an alternative low risk choice of serving half-cooked eggs.
