Prawns Fry Egg (Hong Kong Ha Yan Fry Egg 蝦仁炒蛋)

Ingredients
  

Main Ingredients

  • 60 g Prawns
  • 3 pieces Eggs
  • 2 bunch Yellow Chives
  • 2 tbsp Oil

Marinades

  • ½ tsp Salt
  • ¼ tsp Sugar

Seasonings

  • ½ tsp Salt
  • ¼ tsp Sugar

Instructions
 

  • Prepare all ingredients.
  • Dry and marinate the prawns.  Cut the yellow chives into length of 2cm.
  • Beat the eggs and add all seasonings into the beaten eggs.
  • Heat the pan with 1tbsp oil, add yellow chives and then prawns.   Fry the ingredients until they are completely cooked. 
  • Lift the fried ingredients up and put them into the beaten eggs.
  • Heat the pan again using high heat with 2 tbsp of oil.  Add the beaten egg and all ingredients back into pan.
    Tips: Once added all the ingredients into the pan, immediately turn the heat to low heat or even turn it off.  This step ensures the egg get slowly heated until 70%-80% done which can keep the scumbled egg smooth and tender.

Notes

There is a chance that some eggs carry the bacteria salmonella.  If you have any concerns about serving half-cooked eggs, cook the eggs until the eggs are firmed in this case.  Or using Japanese eggs (Pasteurized eggs) as an alternative low risk choice of serving half-cooked eggs.
