Japanese ginger pork is a traditional Japanese home style dish.  The idea of “using ginger in grilling pork” was first developed at the beginning Showa (Title of Japanese emperor, 1926 – 1989).  To get rid of gamey taste of the pork, the Japanese started to use ginger in pork grilling or frying dishes.

Origin of the dish…

In the middle of Showa, a restaurant in Tokyo decided to expand their business, so they explored different ways of “how to provide a delivery bento in a quick and easy way”. 

One of the chefs then suggested to use ginger, onion and pork slices and seasoned with Japanese sauce as the main course in bento. 

As all ingredients were easy to source and simple to cook, the Japanese ginger pork then quickly became a very popular home style cooking dish.

Japanese ginger pork is a traditional Japanese home style dish. Just few ingredients, you can taste an original Japanese cuisine at home!

Ingredients
  

Main Ingredients

  • 200 g Pork shoulder butt slices
  • 20 g Ginger
  • ½ piece Onion
  • 1 tbsp Oil
  • 2 tbsp Flour

Seasonings

  • 2 tbsp Japanese soy sauce
  • 2 tbsp Mirin (みりん or味醂)
  • 2 tbsp Japaneserice wine (Optional)
  • tsp Sugar

Instructions
 

  • Grind ginger and retain the ginger sauce.
  • Slice the onion and prepare the seasonings.  Add the grinded ginger sauce into the seasonings.
  • Coat the pork slice with flour to keep the juiciness and freshness during pan fry.
  • Heat a frying pan with 1 tbsp oil.  Pan fry the pork slices until colour start to change.
  • Add onion and stir fry them.
  • Pour the seasonings into the pan and stir fry it until the sauce gets thicken. Then you can enjoy it with bowl of rice!
