In Asian culture, salt preservation method is commonly used in preserving meats and vegetables. In this golden prawns recipe, we are using one of the popular preserved ingredients – salted egg to burst the flavour.
How to make/DIY salted egg?
Traditional salted eggs are made of duck eggs. By soaking the duck eggs in brine with anise star and Sichuan pepper for at least a month, the saltiness will then immerse into the eggs and harden the egg yolk and condense the irresistible flavour.

Salted Egg Prawns (Chinese Golden Prawns 黃金蝦球)
Ingredients
Main Ingredients
- 200 g Prawn
- 2 pieces Salted egg yolks
- 1 piece Egg white
- ½ cup Corn starch
- 3 tbsp Oil
- 2 gloves Garlic
- 2 tbsp Butter
- ¼ tsp Sugar
- ¼ tsp Soy sauce
Marinades
- ½ tsp Salt
- ½ tsp Chinese rice wine
- Little White pepper (Optional)
Instructions
- Wash and dry the prawns. Marinate the prawns with the marinades for 20 mins. Mince the garlic.
- Steam the salted egg yolks for 15 mins. After that, mash the salted egg with fork.
- Dry the prawns after marination. Coat the prawns with egg white and then corn starch.
- Heat the pan with oil. Add prawns and fry until coating turn golden and crispy. Get the prawns out from the pan.
- Reheat the pan with butter. Add garlic, salted egg yolks, soy sauce and sugar to stir fry it.
